IMPORTANCE OF VITAMIN E

Vitamin E is a potent antioxidant and helps protect fatty acids, amino acids, DNA, proteins and cells from the damaging effects of free radicals.

Cell membranes are made up of phospholipids and are the most vulnerable to oxidation because they contain fewer saturated fatty acids than the stored triacylglycerols within the cell.

Glutathione peroxidase is an intracellular antioxidant enzyme, and vitamin E potentiates action of this important enzyme by serving as a free radical scavenger, thus preventing lipid hydroperoxide formation. Glutathione peroxidase is found in liver, adipose tissue, muscle and glandular tissue, and its activity is complementary to that of another antioxidant enzyme called catalase.

Working in concert with vitamin E, these enzymes protect the integrity of the cell membrane by preventing the degradation, through oxidation, of the membrane lipids. This function of vitamin E is observed more clearly when the intake of polyunsaturated fatty acids is higher. As the consumption of polyunsaturated fatty acids is increased, a larger portion of them is incorporated into the membrane lipids, which in turn become more vulnerable to oxidation. Unless protected against the damaging effects of oxidation, the functionality of the membranes will be compromised and, if uncorrected, the cell will die.

Uncontrolled oxidative stress also results in damage to proteins and DNA, with the possible result of aberrant gene products.
